An assortment of chinese teas: green, blue (oolong) and red (english black tea). The tins labelled China Green Tea, Lung Ching (Dragon Well) and Jasmine Tea are all green teas. The Oolong and Tikuanyin (Iron Goddess of Mercy) are blue or blue-green in the chinese classification. The Yunnan Tea caddy contains red tea, closest to our black tea but lighter in colour and body. China black tea or Pu-erh undergoes a second fermentation and can be drunk with milk. The exact mix of teas varies, may include Orchid Oolong. All chinese tea is simply the dried leaves camellia sinensis, the same plant as Indian and African black teas. Differences in climate, harvesting and exactly how the leaves are dried produces an amazing variety of flavours. Green tea is the freshest flavour, closest to the original leaf, the Oolongs are partly oxidised adding darker, smokier tones while red tea is fully oxidised. China Black is twice fermented giving a uniquely smooth and aromatic brew. All green teas are packed with healthy antioxidants with all the benefits of a superfood.
